Part of my non-coffee morning routine is a spinach smoothie. Julia and I have been drinking them for a couple months. I love that I can sneak her greens without her knowing, and she likes that’s she’s drinking something called a Green Monster. (Really. Google it.) This morning, I was out of store-bought spinach, and replaced it in my blender for the locally grown kale from our CSA. And for even more veggie goodness, I added half a beet. Kale makes this smoothie a little more veggie tasting, and the beets add kind of an earthy aftertaste. But Julia still enjoyed it, and Max loved it even more.
I’m about to share my recipe with you under one condition: please don’t tell Julia what’s inside. She’ll stop drinking at the first mention of leafy greens.
30 Days Kale and Beet Smoothie
1 scoop ground Flax seed
1 hand full fresh Kale (raw, washed, and chopped)
1/2 of a Beet (copped well)
3 oz Yogurt (I use lowfat Greek yogurt)
3/4 cup Milk
4 or 5 Ice Cubes
1 Banana
Put it in a blender in the order above and blend until smooth. Pour into a glass and enjoy.

I've been doing that too, but can't resist adding blueberries or strawberries to everything for a better taste (and look).
I thought to add strawberries, but then I remembered I wanted to save them for strawberry shortcake, so I resisted. Maybe next week after we go strawberry picking I'll be more generous.
I do agree that the green is a little intimidating at first.
