I love fruits and veggies that have a lot of water in them. Watermelon (duh), avocado, cucumber, cantaloupe, strawberries, celery, honeydew, oranges, all have high water content, which helps to keep you hydrated and even flush the bad stuff out of your system. Last summer I professed my love of watermelon salad with mint and cucumber. And I thought that some variation might make a good smoothie. Of course January isn’t known for its watermelon harvest, and that’s where the honeydew melon comes in. It’s still sweet and still has plenty of liquid inside, it’s just greener.
This recipe makes a whole pitcher. But at my house my kids drink it with me, so a pitcher lasts for breakfast.
Honeydew, Cucumber, Mint Smoothie
1/2 Cucumber, peeled and sliced
2 cups Honeydew, peeled and chopped
2 tablespoons fresh lime juice
1/4 fresh mint leaves (or more or less to taste)
Combine all the ingredients in a blender until smooth. Add a few ice cubes if you like it thicker. Yum.
