One week in. Want to know what’s changed? Well, other than the lack of wheat on my plate, my skin is clearer. I have more energy. And I’m down four pounds. Such positive differences with such a simple, gluten free solution, right? But more than that, these changes are motivational and inspirational each time I step into my kitchen or put fork to plate. And right now, I’m proof of this Hippocrates quote, “Let food by thy medicine, thy medicine shall be thy food.”
I can’t say that I don’t miss wheat. This gluten free thing is a constant choice. And tonight I ate a perfectly grilled hamburger without the bun, and I didn’t enjoy it in quite the same way. But when I remember and feel the differences, I’m more motivated than ever to keep it up.
